This guide will help you jailbreak any iPod Touch 1G/2G/3G device using a software called Spirit using your Windows, Macintosh or Linux based computer. Now works on the latest firmware 3.1.3 as well as the third generation iPod Touch.

Jailbreak, in brief, is the process of freeing your Apple device from the restrictions imposed by the manufacturer. It’s a software installation which will hence give you ability to install third party ap
lications including those unapproved by your carrier or Apple.
This tutorial has been tested and works for all iPod Touch devices having the latest firmware. Spirit is an untethered jailbreak, which means you will have to jailbreak only once. No need to do it everytime the device is restarted.
The latest firmware version released at the time of writing this post is 3.1.3. If your iPod’s firmware version is older you can get 3.1.3 firmware here and upgrade in iTunes and then proceed as follows.
Step One
Download the Spirit software for your computer.
Windows
Mac OS
Linux
Step Two:
Sync and backup your device with iTunes before proceeding. It has to be an activated device and must not be in restore mode.
Step Three:
Run Spirit.
Note: If you are a Windows 7 or Vista User you will need to run this software in Windows 98 Compatibilty mode.
Step Four:
It will show you your device and firmware version. Once you see your device Click on Jailbreak button.
Step Five:
Wait for a few minutes. You can click the quit button once the Jailbreak Complete message appears. Your device will restart automatically and voila! Jailbreak done.

Note: This process is absolutely reversible. You can simply restore your device in iTunes and set it up as a new one. You may want to do it before you take it to the Apple store for repairs.
